September 27th is National Corned Beef Hash Day! Corned beef hash was a meal that grew popular during a time of raging food scarcity. This day serves as a reminder to prevent food waste, and get creative with leftover food.
It’s believed that Jewish immigrants from northern Europe (Ashkenazi Jews) brought corned beef hash to the U.S. in the late 19th century, and since then, the recipes have become a common American staple.

Sauté some onions, add chopped boiled potatoes, and chopped cooked corned beef. Let them sizzle in the pan until browned. Make a few nests in your pan of corn beef and crack the eggs into them. Cover the pan for a few minutes until the whites are set, and then serve the eggs and hash together.
